One Pot Creamy Tomato Basil Pasta Bake
One pot and a store bought tomato sauce that tastes homemade? Doesn’t get much more convenient than that! This pasta bake uses linguine, but if you only have spaghetti or other pasta on hand (or you want to substitute Marinara for the Tomato Basil flavor) it would taste delicious too.
Ingredients
1 pound linguine
1 tablespoon salted butter
1 ¼ cup pesto
1/2 cup oil-packed sun-dried tomatoes, oil drained and chopped
4 ounces goat cheese, crumbled
1 cup cubed gruyere or fontina cheese
1/2 cup heavy cream
kosher salt and pepper
6 ounces fresh mozzarella cheese, torn
Fresh torn basil leaves, for garnish
Directions
Preheat the oven to 375 degrees F.
Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain the pasta and add it back to the pot.
Add the butter, pesto, marinara sauce, sun-dried tomatoes, goat cheese, gruyere or fontina cheese, and cream. Season with salt and pepper. Gently toss everything together until a creamy sauce has formed, about 3-5 minutes.
Transfer the pasta to a 9x13 inch baking dish. Scatter the mozzarella over the pasta.
Transfer to the oven and bake for 10 to 15 minutes, then turn the broiler on and broil for 2 minutes or until cheese is golden and bubbly.
Remove from the oven and let sit for 5-10 minutes. Serve topped with fresh basil.
