Roasted Red Pepper Eggs in Purgatory
We’re bringing you a veggie-based dish just in time for summer. This quick and easy recipe is a delicious option for everything from brunch to dinner, featuring our premium marinara sauce, protein-rich eggs, and sweet, aromatic roasted red peppers. You’ll be amazed by how heavenly purgatory tastes!
Ingredients:
1 onion, diced
2 cloves garlic, minced
1 tbsp olive oil
1 16oz jar roasted red peppers, diced
6 eggs
1 tbsp parsley, chopped
2 tbsp crumbled feta
Directions:
In a large cast iron pan, heat olive oil over medium heat.
Add onion and sauté until translucent.
Add garlic and cook for an additional 2 minutes.
Stir in roasted red pepper and The Jersey Tomato Co. Marinara Sauce, and simmer for 7-10 minutes, allowing the mixture to thicken.
Make 6 wells in your sauce mixture with the back of a spoon and crack an egg into each well.
Cover and cook until the whites are set and the yolks are your desired doneness.
Off the heat, add parsley and feta.
Serve with crusty bread and enjoy!
