Roasted Red Pepper Eggs in Purgatory

This quick and easy recipe is a delicious option for everything from brunch to dinner, featuring our premium marinara sauce, protein-rich eggs, and sweet, aromatic roasted red peppers. You’ll be amazed by how heavenly purgatory tastes!

 
 

Ingredients:

  • 1 onion, diced 

  • 2 cloves garlic, minced 

  • 1 tbsp olive oil

  • 1 16oz jar roasted red peppers, diced 

  • 1 jar The Jersey Tomato Co. Marinara Sauce

  • 6 eggs 

  • 1 tbsp parsley, chopped 

  • 2 tbsp crumbled feta

Directions:

  • In a large cast iron pan, heat olive oil over medium heat. 

  • Add onion and sauté until translucent. 

  • Add garlic and cook for an additional 2 minutes. 

  • Stir in roasted red pepper and The Jersey Tomato Co. Marinara Sauce, and simmer for 7-10 minutes, allowing the mixture to thicken. 

  • Make 6 wells in your sauce mixture with the back of a spoon and crack an egg into each well. 

  • Cover and cook until the whites are set and the yolks are your desired doneness. 

  • Off the heat, add parsley and feta. 

  • Serve with crusty bread and enjoy!
