Caprese Tomato Basil Pops

Say hello to summer with these classy and delicious Caprese Tomato Basil Pops! Skewer a few classic Italian ingredients and bring the flavors together with our perfectly balanced marinara sauce. Savory and refreshing, this dish will deliver the garden-fresh taste of Jersey tomatoes to your parties, barbecues, and poolside spreads.

 
 

Ingredients:

  • 2 pints cherry tomatoes

  • 6 tablespoons olive oil, divided

  • Salt and pepper to taste

  • 6 oz farfalle pasta

  • 16 oz container fresh small mozzarella cheese balls

  • Wooden skewers

  • 1 tablespoon oregano 

  • ¼ cup fresh basil finely chopped, divided

  • ½  jar of The Jersey Tomato Co. Marinara

Directions:

  1. Preheat the oven to 350°F with the rack placed in the center of the oven.

  2. Toss the tomatoes with 3 tablespoons of olive oil on a baking sheet. Season with salt and pepper. Roast for about 30-45 minutes, or until browned. 

  3. While the tomatoes roast, bring a pot of water to a rolling boil. Salt the water and drop in the pasta. Cook according to the pasta package directions until the pasta is al dente. Drain under cold water and set aside.

  4. In a medium sized bowl, add mozzarella cheese balls, olive oil and oregano. Mix until well combined. 

  5. Assemble the skewers by threading the pasta, roasted tomato, mozzarella, basil and alternating as you go. Place on a baking sheet and repeat with remaining ingredients.

  6. Add the The Jersey Tomato Co. Marinara sauce in a small bowl. Garnish with oregano before serving. Dip your pops in sauce and enjoy!
