Roasted Zucchini Summer Pasta Salad

 

This dish embodies the spirit of summer, delivering light and bright flavors in a quick and easy recipe. Ingredients

  • 1 16 oz package penne or rotini pasta

  • 2 medium zucchini

  • 1 tbsp olive oil

  • 1 tsp salt

  • 1/2 tsp pepper

  • 3/4 cup The Jersey Tomato Co. Marinara

  • 1 cup cherry tomatoes, halved 

  • 1/4 cup red onion, thinly sliced 

  • 1/2 cup feta, crumbled

  • 1/4 cup fresh parsley, chopped

Directions 

  1. Preheat the oven to 450.

  2. Cook pasta according to the package instructions. 

  3. Cut zucchini lengthwise and then into 1/2 inch rounds. In a bowl, toss the zucchini with olive oil, salt, and pepper. 

  4. Add the zucchini in a single row to a parchment-lined baking sheet and bake for 10-15 minutes, or until the zucchini is fork-tender.

  5. Once pasta and zucchini have cooked, toss with The Jersey Tomato Co. Marinara sauce.

  6. Add your remaining ingredients and toss again to combine.

  7. Serve and enjoy!
