Roasted Zucchini Summer Pasta Salad
This dish embodies the spirit of summer, delivering light and bright flavors in a quick and easy recipe. Ingredients
1 16 oz package penne or rotini pasta
2 medium zucchini
1 tbsp olive oil
1 tsp salt
1/2 tsp pepper
3/4 cup The Jersey Tomato Co. Marinara
1 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/2 cup feta, crumbled
1/4 cup fresh parsley, chopped
Directions
Preheat the oven to 450.
Cook pasta according to the package instructions.
Cut zucchini lengthwise and then into 1/2 inch rounds. In a bowl, toss the zucchini with olive oil, salt, and pepper.
Add the zucchini in a single row to a parchment-lined baking sheet and bake for 10-15 minutes, or until the zucchini is fork-tender.
Once pasta and zucchini have cooked, toss with The Jersey Tomato Co. Marinara sauce.
Add your remaining ingredients and toss again to combine.
