Garlic Marinara Potato Skins
We love a good pasta dish, but sometimes you want to think outside the (spaghetti) box. Top savory potato skins with the only sauce featuring tomatoes with the perfect balance of sweetness and acidity. Our aromatic Roasted Garlic sauce is the perfect match for this dish.
Ingredients
6 medium russet potatoes
2 tablespoons extra-virgin olive oil
1⁄2 teaspoon salt
1⁄4 teaspoon ground pepper
Toppings
Sour cream
1⁄2 cup shredded cheddar cheese
Minced fresh parsley for garnish
Directions
Prick potatoes several times with a fork and bake at 350° for 1 hour.
Cut the potatoes in half lengthwise and, leaving a 1/4-inch border, scoop out the insides (save for another use).
Add The Jersey Tomato Co. Roasted Garlic Sauce on top and sprinkle with cheese.
Place back in the oven for 12-15 minutes.
Serve the potato skins topped with sour cream and parsley.
