Vegan Penne alla Vodka
Sometimes we have to do the impossible in the kitchen and find a dish that’s quick and easy, elegant and delicious, and suitable for restrictive diets. This pasta dish is dairy-free but full of distinctive flavor. The sauce is the star of the show and you’ll want to eat it by the spoonful! Add some plant-based protein for a heartier meal.
Ingredients
1/2c coconut cream
1/4 tsp red pepper flakes
1/2 tsp garlic powder
Pinch of salt
1/2c vodka
3c penne
3oz shredded vegan mozzarella, plus more for garnish
Fresh basil
Directions:
Combine The Jersey Tomato Co. Roasted Garlic Sauce, coconut cream, red pepper flakes, garlic powder and salt in a medium saucepan.
Let sauce simmer for 10 mins then add vodka. Simmer an additional 20 minutes.
While the sauce simmers, cook pasta according to package directions.
Add cooked pasta and vegan mozzarella to the sauce.
Top with additional vegan mozzarella and torn basil, serve immediately.
