Vegan Meatball Marinara Stuffed Baked Potatoes

Ingredients
6 medium russet potatoes
Olive oil and sea salt for baking potatoes
18 plant-based meatballs
Minced fresh parsley for garnish
Directions
Cook potatoes in the oven at 350° for 1 hour.
Cook plant-based meatballs on stove top according to package directions.
Add tomato sauce and bring to a low boil. Cover and simmer for approximately five minutes.
Cut each potato in half and add the meatballs and sauce mixture inside. Serve immediately.
Store leftovers in the refrigerator for up to 4 days.
