Healthy Taco Salad in a Jar
Marinara sauce isn’t just for spaghetti and chicken parm anymore! A delicious option for taco lovers on low carb diets, this convenient and healthy recipe is a great way to shake things up. We took all the best things about tacos and combined them with the best store-bought tomato sauce for a delicious, nutritious, on-the-go meal.
Ingredients
1 tbsp olive oil
8oz vegan chicken breast cut into bite-sized pieces
1 large red bell pepper, sliced
1/2 cup onion, roughly chopped (about ½ an onion )
2 tsp chili powder
1 tsp oregano
2 tsp cumin
1 large avocado
1 large lime, juiced
2 cups Roma tomatoes, chopped
1/2 cup cucumber, chopped
1/2 cup cilantro, roughly chopped
2 cups fresh spinach, roughly chopped
2 quart wide mouth mason jars
Directions
Heat olive oil in a large skillet over medium heat. Cook the vegan chicken until brown. Add the cumin, oregano, chili powder, pepper, onion and Marinara sauce. Cook on medium heat for 10 minutes.
Scoop the avocado and the lime juice into a small food processor and blend until smooth.
To assemble, place 1/2 cup of chicken mixture in the bottom of each jar, spreading evenly. Divide the avocado-lime mixture on top, gently spreading out. Next place the chopped tomatoes and cucumbers in the jar. Top it off with cilantro and spinach.
Seal, shake the jar and enjoy.
